Thanks to our two harvest reception lines, both with sorting tables, we can harvest as and when optimal ripeness is reached in each and every individual plot.
We have temperature-controlled concrete vats of different sizes in our vat room so we can assemble and vinify small homogenous batches. As far as winemaking is concerned, we prefer extraction techniques that require great precision so as to respect the individuality of each plot selection. The wine spends between fifteen and thirty days in vat depending on the potential of each batch.

Matured for 14 months in both vats and French oak barrels with 25% new oak. Black cherry and spice on the nose. A full-bodied, generously-juicy and very quaffable wine with great structure. It is easy to drink and goes extremely well with red meats, Sunday roasts and the promise of shared and extended pleasures.

This second wine is made from batches that have come from young plots or less prestigious terroirs. It is aged for nine months in vats to obtain a wine that is fruity, round and supple. It can be enjoyed slightly cooler in the summer months and goes perfectly well with casual fine dining (BBQ, tajine, pasta…).
